Note that the colors in most embossed holograms shift through the color spectrum as they are tilted up and down. Hence, the name "rainbow hologram" is often used to describe them. You are looking at only one view. The color black you see is the paper the hologram is attached to.

It is possible to get embossed holographic images that playback a specific color at a specific viewing angle. The Holography MarketPlace 6th Edition explains this in more detail in Chapter 2 - Artwork Origination.
